PIZZA BURRITO PIE






   I recalled my days as a foster mother of five children and scraping to make ends meet after reading about Colorado food stamp recipients documenting their struggles to survive and feed their families. 
   Tonight, I made one of my budget meals. It is Pizza Burrito Pie with Chicken-Herb Rice.  One package of medium tortillas, one large can of refried beans, and 3 cups cooked pinto beans makes up the bulk of this recipe. I always made a pot of bean soup and sweet yellow cornbread the day before, then used the leftover beans. 

PIZZA BURRITO PIE

8 medium flour tortillas
1 large can refried beans
3 cups pinto beans, drained
1/4 cup mild taco sauce (I save leftover packets from fast-food)
1/4 cup shredded Mexican cheese
1 packet taco seasoning (I use coupons to get it free)
1 cup chopped tomatoes
1 cup chopped onion
1/2 cup chopped cilantro
Juice 2 limes
Juice 1 lemon

Preheat oven to 350 degrees. Line a large pizza pan with parchment paper of spray with cooking spray. Set aside. Mix all beans, taco sauce and seasoning, cheese in a large bowl, mixing well. Place four tortillas on a large pizza pan. Add feeling, leaving 1/4 inch around edges. Place another tortilla on top of each. Place in a 350 degree pre-heated oven and bake for fifteen to twenty minutes. 
   In a medium-sized mixing bowl, mix tomatoes, onion, cilantro, and lime and lemon juices, tossing well. Place in refrigerator. 
   Add sour cream, more taco sauce, and tomato-onion topping. Serve with Chicken-Herb Rice. 


CHICKEN-HERB RICE


3 tablespoons Land O' Lakes salted butter
2 cups rice
1 tablespoon chicken base
1/4 teaspoon ground thyme
1/2 teaspoon dried parsley
1/2 teaspoon dried basil
1/2 teaspoon paprika
1/2 teaspoon  seasoned salt
2 1/2 cups hot water

Heat butter over medium-high heat. Add rice and herbs,  and saute until brown. Add  hot water, stirring well. Reduce heat to medium-low, cover and cook for ten to fifteen minutes.

Puffed French Toast



We are huge fans of French toast. Therefore, when I saw a Youtube video of Disney's Puffed French Toast last year, I made a mental note to try it

   Suffice to say, it was a big hit at my house. Jessie had five pieces, and Andrew had four pieces. I was stuffed after eagerly consuming three pieces.

Whoopie Pie Book is Out









   Whoopie Pie Bakers is now in one complete novel. I enjoyed writing it, hated to see it end. I am writing on the fifth volume of Amish Snowflakes today. I hope to get that serial done by mid-March. Happy Reading!

BBQ Chicken







I made BBQ Chicken with a different twist. Add garlic-Parmesan Potatoes and Seasoned Green Beans, and this meal is a winner. The recipe is below. 

BBQ Chicken 

6 chicken breasts, cooked and shredded or chopped
3 cups tomato sauce
1 cup brown sugar, packed
4 cloves garlic, minced
2 teaspoons seasoned salt
1 teaspoon ground black pepper
2 teaspoons ground mustard
1 teaspoon celery seed
1 teaspoon dried parsley
1/2 teaspoon paprika
1 large sweet onion, finely chopped
1 heaping tablespoon of grape jelly

Mix all but the chicken in a heavy saucepan. Cook until boiling, stirring constantly. Reduce heat to simmer, add chicken and let simmer half an hour. Serve on toasted buns.

Chicken Teriyaki









I made Chicken Teriyaki with Teriyaki noodles this past week, and I have to say that it was so tender that it fell on the bone, savory with the perfect sweetness. It is easy to make. 

Chicken Teriyaki

1 whole chicken, cut up with legs attached to thighs
1 jar Teriyaki sauce from Aldi
1 teaspoon ground black pepper
1/2 teaspoon salt
1 teaspoon seasoned salt
1 teaspoon sugar

Cut up chicken and pat dry. Mix dry seasonings  pat onto chicken. Place in parchment-lined baking dish, then pour Teriyaki sauce over chicken. Cover with foil and bake at 300 degrees for an hour to an hour and twenty minutes. Check halfway through and pan sauce from pan onto chicken. Cover and continue baking. Last ten minutes, uncover to let the skin brown.

Parmesan Potatoes



   Hello, Angels. I hope the New Year is going good for you. I made some Parmesan-Herb Baby Klondikes I heated up leftover green beans and BBQ, and it was very good. For the potatoes, you add finely chopped Thyme, basil, parsley, Jane's Krazy Mixed-Up salt, seasoned salt, and garlic.  I heated 1/4 cup extra virgin olive oil and 1/4 butter over medium-high heat and added the halved potatoes. Cook until dark brown on the open side of the potatoes, then turn, reduce heat to medium, and cook additional ten minutes.Add grated Parmesan cheese after turning.

Happy New Year and New Recipe






   Happy New Year, Angels. What are some of your goals for the New Year? Some of mine are as follows....


  1. Have more lunches with my family.
  2. Publish a quarterly devotional.
  3. Coach six new authors.
  4. Publish one-hundred short story volumes.
  5. Publish ten novels (from short story serials)
  6. Travel to Paris, Geneva, and Denmark.
  7. Bring The Gospel of Jesus Christ to new countries.
  8. Enrich current relationships.
  9. Increase income to 10K a month (around 4K-5K now.)
  10. Visit and feature ten spas on my travel blog.
  11. Travel to Florida to see Gabriel.
  12. Book a successful book tour.
  13. Visit schools for my Be Real, Stay Strong. Don't Be Bullied, and Don't Do Drugs campaign.
  14. Bless more people in need with my #Powerofprayerlunchhour.
  15. Triple help to the less fortunate. 
  16. Help the food banks more.
  17. Double prayer time and quiet time with God.

   On the food front, I made  Mesquite Turkey-Stuffed Burrito with Candied Ambrosia Apples and Cinnamon Tortilla Wedges.  The burrito has Velveeta cheese, Rotel diced tomatoes and jalapenos, taco seasoning, Oscar Mayer Mesquite Turkey Breast Strips, and sour cream.
   I made the Cinnamon Tortilla Wedges by cutting tortillas into wedges, then frying in extra virgin olive oil. You need to drain them on paper towels, then sprinkle with cinnamon and sugar.
   I cooked the Ambrosia apples in extra virgin olive oil, butter, and brown sugar (3 tablespoons each), then added a cinnamon stick halfway through cooking. Cook until a rich, brown color.
